Laughing Cow Chicken


1 pound skinless boneless chicken breast
8 slices deli-style fat free ham slices
4 wedge Laughing Cow Cheese - Regular
1/4 package shake n Bake Pork

Preheat oven to 400 degrees.
Place each chicken breast between wax paper and pound to 1/4 inch thick. Place 2 slices of ham and one cheese wedge on each chicken breast. Roll chicken up and secure with toothpicks. Spray a baking dish with Pam and place chicken breast edge side down on dish. Sprinkle chicken evenly with Shake 'n Bake.
Bake at 400 for 35 to 45 minutes or until juices run clear and chicken is browned.

Makes four 5 point servings

3 Point Broiled Eggplant


6 slices of Eggplant (1/4” thick)
1 tsp. of Olive Oil
6 slices of Tomato (1/4” thick)
2 oz of shredded mozzarella cheese (part-skim if poss.)
Basil
Black Pepper


 Place eggplant slices in a single layer on a non-stick baking sheet. Lightly brush slices with ½ tsp. of olive oil. Broil until eggplant is browned. Turn slices over and brush with  remaining oil and broil until eggplant is browned.
 Top each eggplant slice with a tomato slice and broil for an additional minute.
 Divide the cheese between each slice and sprinkle with basil and pepper. Boil until cheese is melted and golden brown.

Makes 2 servings @ 3 points per serving.

Weight Watchers Mexican Chicken

1 pkg Taco seasoning
4 (4 oz) chicken breasts
1 cup salsa
1/4 cup non-fat sour cream
Place chicken and  taco seasoning in plastic bag, shake to coat.
Spray casserole dish with no stick cooking spray then place chicken in dish.
Bake 30 minutes  @ 375 degrees.
Top with salsa about 5 minutes before done cooking.
Top with sour cream and serve!      makes four  4 pts servings

Weight Watcher's Stuffed French Toast

8 slices reduced-calorie white bread
1/4 C. soft fat-free cream cheese
1/4 C.  spreadable fruit spread   (you choose flavor)
2 eggs
2 Tbs skim milk
1/2 tsp vanilla extract

Spread 1 teaspoon cream cheese onto each slice of bread. Spread 1 teaspoon fruit spread over top of each. Put bread together to form 4 sandwiches. In a medium bowl, combine eggs, skim milk, and vanilla extract. Beat well, using a fork. Spray a griddle or large skillet with butter-flavored cooking spray. Dip each sandwich into egg mixture, coating both sides evenly. Place on griddle and cook 2 /3 minutes on each side or until golden brown.  ENJOY!
makes 4, 4 point serving's.

2 Point Veggie Bake.

1 C chopped zucchini
1 C. chooped tomato
1 C.  chopped onion
1/3 C. grated Parmesan cheese
1/2 C. Bisquick Reduced fat baking mix
1 C. skim milk
 2 eggs
1/2 teaspoon salt
1/8 teaspoon pepper

 Heat oven to 400  Grease 9-inch pie pan. Layer zucchini, tomato, onion and cheese in pie pan. mix remaining ingredients together and Pour into pie plate. Bake about 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes.


Makes 6,  2 point servings.

3 Point Eggplant Casserole

1 C. spaghetti sauce
3/4 C. shredded lowfat mozzarella cheese
3/4 C. nonfat cottage cheese
2 Tb grated Parmesan cheese 
3/4 lb eggplant  sliced 1/2" thick

Grill eggplant on George Foreman Grill for about 8-10 minutes until soft. Spray 8x8 baking pan with nonstick spray. Put eggplant on bottom of pan. Spread spaghetti sauce over eggplant. Mix cottage cheese and mozzarella, and spread it over sauce. Sprinkle with Parmesan cheese. Bake at 350ยบ for 30-35 minutes

Serving Size : 4
 3 WW points

Frozen Peanut Butter Cup's. 2 point's each!

1 (8 oz.) Container Fat Free Cool Whip
1/3 Cup Reduced Fat Creamy Peanut Butter
1/4 Cup Hershey's Light Chocolate Syrup

Line a 12 cupcake pan with foil liners. Combine 1 Cup of cool whip with the peanut butter with a whisk. Fold in remaining cool whip. Divide the mixture into the liners evenly. Top each cup with 1 teaspoon of chocolate syrup. Freeze. After frozen, remove from pan and place in a freezer bag or container.

Serves: 12 ~ 2 Weight Watcher Points each

Strawberry Cheesecake Bites

1 (8 oz.) Package Fat Free Cream Cheese, softened


1/3 Cup Powdered Sugar

2 teaspoons Lemon Juice

44 Medium Strawberries, whole

1/2 Cup Graham Cracker Crumbs



In a small mixing bowl, beat together the cream cheese, sugar, and lemon juice until smooth and creamy, set aside. Hollow out the top of each strawberry to a depth of about 3/4 an inch using a paring knife . Fill each with the cream cheese mixture using a pastry bag just slightly above the tops. Place them on a cookie sheet as you do this. Once all of the strawberries are filled, dip each top into the graham cracker crumbs and place back onto the cookie sheet. Place the cookie sheet into the refrigerator and leave them for a few hours or over night to completely chill.

Serves: 11 (4 each) 1 WW Point each.

7 Layer Dip weight Watcher's style

I alway's add cheese to mine it add's point's but I have to have cheese :)

1 (16 oz.) Can Fat Free Refried Beans
2 Tablespoons Taco Seasoning Mix

1 Cup Light Sour Cream

1 Cup Chunky Salsa

1 Cup Shredded Lettuce

1/4 Cup Green Onions, sliced

1 Cup Chopped Tomatoes

2 oz. Ripe Sliced Olives



Lightly spray the bottom of an 8 or 9-inch baking dish with non-stick cooking spray. You can also make this on a small platter or any decorative dish if taking it to a party. In a small bowl, combine the refried beans and taco seasoning. Spread evenly into the bottom of the dish. Next spread a layer of sour cream, followed by the salsa, lettuce, onions and tomatoes. Top with olives. Cover and refrigerate for at least 3 hours.

Serves: 12 (approx. 1/3 cup )
Per Serving: Per Serving: 73 Calories; 1g Fat 3g Dietary Fiber WWP: 1

Powder Sugar substitute

1 Cup Splenda Granular


1/2 Tablespoon Cornstarch

Place all ingredients in blender and whip until the mixture is light and resembles powdered sugar.



Makes: 1/4 Cup 2 ww points

One point Banana Chocolate chip cupcakes

These sound Heavenly!

1 Box Angel Food Cake Mix


1 1/3 Cups Mashed Bananas (approx. 3 bananas)

1 Cup Water

1/2 Cup Mini Chocolate Chips



Preheat oven to 350 degrees. Spray a regular size muffin tin with non-stick cooking spray and set aside. In a medium bowl, combine the banana and water with a hand mixer. Blend in the angel food cake mix. Stir in the chocolate chips. Place 1/4 cup of batter into  muffin tin hole . Bake for 12-14 minutes or until lightly browned.



Serves: 36

Per Serving: 62 Calories; 1g Fat  0 Dietary Fiber  WWP: 1

Weight Watcher's Scalloped Potatoes and Ham

1 (4.9 oz.) Box  Scalloped Potatoes
1/3 Cup Skim Milk

2 Cups Water

2 Tablespoon Fat Free Margarine Spread

1/2 Lb. Lean Sliced Ham, chopped into small pieces

Pepper to taste



Spray crockpot with non-stick cooking spray. Combine the milk, water and margarine spread in the crockpot. Open the box of scalloped potatoes and remove the cheese packet. Mix the cheese packet in with the milk mixture. Next Stir in the potatoes, ham and pepper. Try and push all of the ingredients down so that they are mostly covered with liquid. Cover and cook on high for 2 hours.



  2 weight watcher point's per 1/2 cup serving

Creamy Ranch Potatoes and Chicken

20 oz. Potatoes, peeled and cubed

1/2 of a 1 oz. Package of Dry Ranch Mix

1 Pound Boneless/Skinless Chicken Breasts, cubed

1  Can 98% Fat Free Cream of Chicken Soup

1/4 Cup Fat Free Sour Cream

1/4 Cup Finely Chopped Onion

Salt and Pepper to Taste



Spray crockpot with non-stick cooking spray.

Mix all ingredients together and place into crockpot.

Cook on low for 6-8 hours or high for 4-6 hours.



Serves: 5 (1 Cup Each)

Per Serving: 242 Calories; 3g  Fat  2g Fiber WWP: 5

Taco Soup in the crockpot


 This sounds and looks so good, and only 3 Weight Watcher Point's per 1 cup serving!!

 1/2 lb. Lean Ground Beef

2 (14.5 oz.) Cans Mexican Stewed Tomatoes

1 (15 oz.) Can Pinto Beans

1 (15.5 oz.) Can Kidney Beans

1 1/3 Cups Whole Kernel Frozen Corn, thawed

1 Package Taco Seasoning

1 Medium Onion, chopped

30 oz. Water

Pepper to Taste



Brown meat and onion in a skillet; drain and rinse; place in crockpot with remaining ingredients. Cook on low 6-8 hours.



Serves: 12 (1 Cup Each)

Per Serving: 156 Calories; 4g Fat  6g Dietary Fiber;  WWP: 3

One point Chocolate Shake ( serves 4)

2 Cups skim milk-cold

1 Package Jell-o Chocolate Fudge Instant Pudding and Pie Filling, fat-free, sugar-free-Reduced Calorie
2 Cups crushed ice

Add everything  into blender. Blend on high  until smooth.
(mixture thickens as it stands. Thin with additional milk, if desired.)
Makes: 4 portions

One Point Berry slushy

4 C. Whole strawberries, sliced (reserve 4 whole berries for garnish if desired)
1 1/2 C. Corsely crushed ice
1/2 C. Orange juice
2 Tbs. Granulated sugar

In  blender, combine sliced strawberries, ice, orange juice and sugar; process to a thick slush. Divide slush among 4  glasses.
Makes 4~ 1 1/4C Servings

Two point Shake.

1 cup skim milk
2 tbl ff sugar free pudding mix any flavor
1 tbl coolwhip
1 tsp vanilla
8 ice cubes
Put all in blender and process till smooth and thick.

weight watcher's Fruit Dip

Serving Size : 32 
1 Point Per Serving


8 ounces light cream cheese -- softened

7 ounces marshmallow cream

1/2 cup crushed pineapple in juice -- drained

1 teaspoon orange zest

1/2 teaspoon  orange concentrate


Combine all ingredients, stir well. Cover and chill

Weight Watcher Mac N' Cheese (8 point's)

Ingredients:
2 cups uncooked elbow macaroni

1 can (12 ounces) fat-free evaporated milk

1-1/2 cups fat-free milk

1/3 cup egg substitute

2 TBS. Deli or Brown Mustard

8 ounces VELVEETA 2% skim Pasteurized Prepared Cheese Product cubed

2 cups (8 ounces) 2% skim shredded sharp cheddar cheese

Pepper to Taste




Directions:
Cook macaroni according to package directions; drain and rinse in cold water.

In a large bowl, combine the evaporated milk, milk, egg substitute, and mustard.
Stir in the Velveeta, sharp cheddar cheese and macaroni.
Pepper to taste.
Transfer to a crock pot coated with cooking spray.
Cover and cook on low for 2-3/4 to 3 hours, stirring once.

Serves 8

Weight Watcher's Chicken Stroganoff ( crock pot)

Makes 6 servings, 4 points each.

Ingredients

1 pound boneless, skinless chicken

1 container (16 oz) fat free sour cream

1 packet powdered onion soup mix

1 can fat free cream of chicken soup

1 small can mushrooms

Direction's
Add all ingredients to crock pot. Cook on low for 6 hours
